Brazilian Creamy Cornmeal Cake

Ingredients

  • 4 eggs
  • 1 tablespoon margarine
  • 2 cups sugar
  • 4 cups milk
  • 7 tablespoons cornmeal
  • 1 tablespoon all-purpose flour
  • 50 g shredded coconut, optional
  • 50 g grated cheese, optional
  • 1 tablespoon baking powder
  • Anise seeds, optional

Preparation

  1. Blend all ingredients except anise seeds in a blender until smooth

  2. If using anise seeds, add them and blend briefly

  3. Pour the batter into a greased and floured baking pan

  4. Bake at 350Β°F (180Β°C) for about 30 minutes, or until a toothpick inserted comes out clean

  5. Let the cake cool slightly, then dust with powdered sugar

Notes

  1. The author used both shredded coconut and grated cheese instead of choosing one
