Brazilian Creamy Cornmeal Cake
Ingredients
- 4 eggs
- 1 tablespoon margarine
- 2 cups sugar
- 4 cups milk
- 7 tablespoons cornmeal
- 1 tablespoon all-purpose flour
- 50 g shredded coconut, optional
- 50 g grated cheese, optional
- 1 tablespoon baking powder
- Anise seeds, optional
Preparation
Blend all ingredients except anise seeds in a blender until smooth
If using anise seeds, add them and blend briefly
Pour the batter into a greased and floured baking pan
Bake at 350Β°F (180Β°C) for about 30 minutes, or until a toothpick inserted comes out clean
Let the cake cool slightly, then dust with powdered sugar

The author used both shredded coconut and grated cheese instead of choosing one
