Fluffy Malaysian Oil Cake

Ingredients

  • 5 eggs
  • 1/2 cup fine sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 cup condensed milk
  • 1 tablespoon Ovaltine
  • 1 cup cooking oil
  • pineapple or banana flavoring
  • 1 teaspoon vanilla essence
  • desired food coloring

Preparation

  1. Combine flour and baking powder, then sift and set aside.

  2. Beat eggs with sugar and Ovaltine until fluffy and airy, about 5 minutes.

  3. Add condensed milk and vanilla essence, beat until well combined.

  4. Add cooking oil and flavoring while beating, just until mixed evenly.

  5. Add the sifted flour.

  6. Fold the mixture with a spatula until smooth.

  7. Divide the batter into 3 or 4 containers.

  8. Add desired food coloring to each container and mix well.

  9. Prepare an 8-inch cake pan.

  10. Line the bottom of the pan with parchment paper.

  11. Pour the batter alternately by color until all is used.

  12. Bake at 170°C, adjusting for your oven, for 45 to 60 minutes or until done.
