Fluffy Malaysian Oil Cake
Ingredients
- 5 eggs
- 1/2 cup fine sugar
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 cup condensed milk
- 1 tablespoon Ovaltine
- 1 cup cooking oil
- pineapple or banana flavoring
- 1 teaspoon vanilla essence
- desired food coloring
Preparation
Combine flour and baking powder, then sift and set aside.
Beat eggs with sugar and Ovaltine until fluffy and airy, about 5 minutes.
Add condensed milk and vanilla essence, beat until well combined.
Add cooking oil and flavoring while beating, just until mixed evenly.
Add the sifted flour.
Fold the mixture with a spatula until smooth.
Divide the batter into 3 or 4 containers.
Add desired food coloring to each container and mix well.
Prepare an 8-inch cake pan.
Line the bottom of the pan with parchment paper.
Pour the batter alternately by color until all is used.
Bake at 170°C, adjusting for your oven, for 45 to 60 minutes or until done.
