Gluten-Free Chocolate Lava Cake

Ingredients

  • 50g rice flour
  • 15g cacao powder
  • 10g cornstarch
  • 200g chocolate
  • 70g margarine
  • 100g soy milk
  • 65g sugar
  • 60g soy yogurt
  • salt

Preparation

  1. Preheat the oven to 230C.

  2. Cut the chocolate and keep 6 squares to put later in the cakes.

  3. Melt the chocolate with the margarine and milk.

  4. In a large bowl, whisk the sugar and yogurt until creamy.

  5. Add the melted mixture and whisk.

  6. Stir in the flour, cacao powder, and cornstarch carefully.

  7. Add 2 pinches of salt and stir.

  8. In individual ramekins, add one layer of the batter then the half pear and a chocolate square, and pour some batter again.

  9. Repeat the operation for each ramekin.

  10. Bake for 10-15 minutes.

  11. Serve immediately.

Tips

  1. You can prepare the batter in advance and store it in the fridge.

  2. It can be baked one cake at a time if desired.

  3. Serve with a scoop of vanilla ice cream for best results.
