Raw Carrot Cake Balls
Ingredients
- 1 cup carrot, chopped
- 1.25 cup oats
- 1/2 cup dried cranberries or raisins
- 1/4 cup almond or sunflower butter
- 1/4 cup walnuts
- 1/2 tbsp melted coconut oil
- 1 tbsp maple syrup
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp all spice
- 1/4 cup shredded coconut for rolling, toasted
Preparation
Toast the shredded coconut in a pan over medium-high heat, stirring often until golden.
Pulse all ingredients except for the coconut in a food processor until well combined.
Form 1-2 tablespoon balls and roll in toasted coconut.
