Raw Carrot Cake Balls

Ingredients

  • 1 cup carrot, chopped
  • 1.25 cup oats
  • 1/2 cup dried cranberries or raisins
  • 1/4 cup almond or sunflower butter
  • 1/4 cup walnuts
  • 1/2 tbsp melted coconut oil
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp all spice
  • 1/4 cup shredded coconut for rolling, toasted

Preparation

  1. Toast the shredded coconut in a pan over medium-high heat, stirring often until golden.

  2. Pulse all ingredients except for the coconut in a food processor until well combined.

  3. Form 1-2 tablespoon balls and roll in toasted coconut.
