Vegan Fig Galette with Almonds and Cinnamon

Ingredients

  • 3 cups of flour
  • Pinch of salt
  • 1 tsp baking powder
  • 1 tbsp vanilla sugar or extract
  • 50g of sugar (1/3 cup)
  • 1/2 cup coconut oil (120ml)
  • 1/2 cup water (120ml)
  • About 12 fresh figs
  • About 40g almonds
  • About 1/2 tsp vegan butter per galette
  • 1 tbsp agave syrup per galette
  • 1/2 tsp cinnamon per galette
  • Vegan whipped cream or ice cream for serving

Preparation

  1. Mix all the ingredients for the dough, knead it smooth and refrigerate for about 20 minutes

  2. Divide the dough in 4 parts, roll it thinly in round shape, put figs, butter, almonds, agave and cinnamon in the middle and fold the ends over the filling

  3. Bake at 180C (350F) for 30 minutes and serve with vegan ice cream or whipped cream
