White Chocolate Matcha Bounty Bites

Ingredients

Filling

  • 2 cups shredded coconut
  • 1/3 cup coconut milk
  • 1/3 cup melted coconut oil
  • 1/3 cup maple syrup or sweetener of your choice
  • 1 tablespoon matcha powder

Chocolate coating

  • 150 g plant-based white chocolate
  • 1 tablespoon coconut oil

Preparation

  1. Line a 18x10 baking tin with parchment paper.

  2. In a bowl combine all the filling ingredients.

  3. Transfer the mixture into the prepared baking tin, press down tightly and place in the freezer for at least 45 minutes or until the mixture is hard.

  4. Lay out a tray with a sheet of parchment paper or you can use a silicone mat.

  5. Melt chocolate together with coconut oil and let it cool slightly.

  6. Once the filling mixture has firmed, take out from the freezer and cut into equal size bars.

  7. Dip each bar into the melted chocolate.

  8. Use a knife to help spread the chocolate evenly onto the bar.

  9. Arrange chocolate-coated bars onto the prepared tray or mat.

  10. Place the tray in the refrigerator until the chocolate is completely set.
