Brioche French Toast with Mascarpone and Berry Compote

Ingredients

Brioche french toast

  • 1 loaf Brioche Bread (about 450 grams)
  • 1 cup fresh berries (about 150 grams)
  • 360 ml half & half
  • 3 eggs
  • 22 grams white sugar
  • 22 grams brown sugar
  • 8 grams ground cinnamon
  • 2.5 grams nutmeg
  • 0.6 grams clove
  • 15 ml vanilla extract
  • 30 grams salted butter
  • Whipped cream (to taste)

Mascarpone filling

  • 115 grams Mascarpone Cheese, room temperature
  • Granulated sugar (to taste)

Berry compote

  • 225 grams frozen berries (any of your choice)
  • 30 ml lemon juice
  • 25 grams sugar

Preparation

Berry compote

  1. Place all ingredients in a small saucepan and bring to a boil over medium heat

  2. Reduce to medium-low, smash half the berries, and cook for 10-12 minutes until syrupy

Mascarpone filling

  1. Mix mascarpone cheese and sugar with a hand mixer until fluffy

  2. Adjust sweetness to taste

Brioche french toast

  1. Slice the brioche loaf into 1-1 1/2 inch slices

  2. Whisk all ingredients except butter in a large bowl

  3. Heat a skillet or griddle to medium or medium-high, add 1 tablespoon of butter, and melt

  4. Dip bread slices in the custard mixture and brown both sides in the skillet

Assembly

  1. Layer French toast slices with mascarpone filling and berry compote

  2. Top with additional berry compote, fresh fruit, and whipped cream
