Comforting All Veggie Dinner with Miso Aubergine

Ingredients

  • 3cm piece of ginger
  • 4 cloves of garlic
  • 2 small green chillies
  • 2 aubergines
  • Sesame oil or extra virgin olive oil
  • 200g vine cherry tomatoes
  • 1/2 tablespoon honey OR agave syrup
  • 3 tablespoons miso paste

Preparation

  1. Preheat your oven to 180 degrees Celsius while preparing the seasoning by mixing ginger, garlic, chillies, and onion with a hint of oil to make a paste.

  2. Pierce the aubergines and massage the mixture over them and into the piercings.

  3. Place the aubergines and cherry tomatoes on an oven tray and cook for 40 minutes.

  4. Mix agave syrup or honey, miso paste, and a little water to make a paste for the glaze.

  5. After 40 minutes, drizzle the miso glaze over the aubergines and cook for another 15 minutes.

  6. Enjoy your Miso roast.
