Creamy Vegan Curry Stew with Vegetables and Chicken

Ingredients

  • 1 onion
  • 1/2 zucchini
  • 1/2 yellow pepper
  • 300 g vegan chicken (grillade filéer, hälsans kök)
  • 2 big handfuls of arugula
  • 5 dl vegan cream (imat, oatly)
  • 0.5 dl vegan parmesan (optional)
  • 2 tbsp curry powder
  • 1 tsp salt
  • 1 tsp black pepper

Preparation

  1. Chop the onion, zucchini, yellow pepper, and chicken into small cubes.

  2. In a pan, fry the onion in some oil.

  3. Add the veggies and chicken and stir for a few minutes.

  4. Add the rest of the ingredients and let the stew cook with a lid on for 10 more minutes.

  5. Serve with rice and add some extra parmesan on top if desired.

  6. This dish is also good with tagliatelle or pasta.
