Creamy Vegan Curry Stew with Vegetables and Chicken
Ingredients
- 1 onion
- 1/2 zucchini
- 1/2 yellow pepper
- 300 g vegan chicken (grillade filéer, hälsans kök)
- 2 big handfuls of arugula
- 5 dl vegan cream (imat, oatly)
- 0.5 dl vegan parmesan (optional)
- 2 tbsp curry powder
- 1 tsp salt
- 1 tsp black pepper
Preparation
Chop the onion, zucchini, yellow pepper, and chicken into small cubes.
In a pan, fry the onion in some oil.
Add the veggies and chicken and stir for a few minutes.
Add the rest of the ingredients and let the stew cook with a lid on for 10 more minutes.
Serve with rice and add some extra parmesan on top if desired.
This dish is also good with tagliatelle or pasta.
