Crispy Turkish Street Simit Bread

Ingredients

  • 500 grams flour
  • 275 ml water at room temperature
  • 1 teaspoon salt
  • 1 teaspoon yeast
  • 1 tablespoon powdered sugar
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar

Coating

  • Pekmez (grape molasses)
  • Sesame seeds
  • Water for dipping

Preparation

  1. Knead all the ingredients well.

  2. Divide the dough into seven pieces and shape each into a cylinder.

  3. Cover with plastic wrap and let rest for 30 minutes.

  4. Roll out the dough into long strands and shape into simit rings.

  5. Mix water and pekmez together to make a dipping mixture.

  6. Dip the simit rings first in the pekmez mixture, then coat with sesame seeds.

  7. Cover with a bag and let sit for 20 minutes.

  8. Place the simits on a baking tray, cover with plastic wrap, and let rise for another 20-30 minutes.

  9. Bake in a preheated oven at 190°C with fan setting until golden brown, about 23 minutes, but check for doneness.

Tips

  1. Optionally, after coating, refrigerate the simits for up to 1 day before baking.
