Crispy Turkish Street Simit Bread
Ingredients
- 500 grams flour
- 275 ml water at room temperature
- 1 teaspoon salt
- 1 teaspoon yeast
- 1 tablespoon powdered sugar
- 1 tablespoon olive oil
- 1 tablespoon vinegar
Coating
- Pekmez (grape molasses)
- Sesame seeds
- Water for dipping
Preparation
Knead all the ingredients well.
Divide the dough into seven pieces and shape each into a cylinder.
Cover with plastic wrap and let rest for 30 minutes.
Roll out the dough into long strands and shape into simit rings.
Mix water and pekmez together to make a dipping mixture.
Dip the simit rings first in the pekmez mixture, then coat with sesame seeds.
Cover with a bag and let sit for 20 minutes.
Place the simits on a baking tray, cover with plastic wrap, and let rise for another 20-30 minutes.
Bake in a preheated oven at 190°C with fan setting until golden brown, about 23 minutes, but check for doneness.
Tips
Optionally, after coating, refrigerate the simits for up to 1 day before baking.
