Macaroni with Shrimp and Broccoli Pesto
Ingredients
- 1 packet macaroni
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 500 grams shrimp
- 1/4 cup fried pine nuts
Broccoli pesto
- 2 cups chopped boiled broccoli
- 1/2 cup chopped parsley
- 4 cloves garlic
- 1/2 cup Parmesan cheese
- 1/4 cup fried pine nuts
- 1/4 cup lemon juice
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil
Preparation
Sprinkle the salt and pepper on the shrimp
In a wide skillet, heat the olive oil, add the shrimp using a wooden spoon, flip the shrimp on both sides until cooked, set aside
In a food processor with the steel blade, place the broccoli, parsley, garlic, cheese, pine nuts, lemon juice, salt, pepper, and olive oil, blend until smooth to make the pesto sauce
In a pot, place the pesto, put the pot on medium heat, add 1 cup of water, stir for one minute only
Add the pasta, stir to absorb the sauce
In a serving dish, place the broccoli pesto, spread the shrimp on top, sprinkle some parsley and pine nuts
