Sunday Leftover Chicken Veggie Bowl

Ingredients

  • 1/2 piece chicken
  • adobe seasoning
  • mushrooms
  • garlic ghee
  • 1/2 avocado
  • everything but the bagel seasoning
  • quinoa
  • broccoli
  • tomatoes
  • zucchini

Preparation

  1. Bake chicken at 400°F for 30 minutes with adobe seasoning.

  2. Sauté mushrooms in garlic ghee.

  3. Roast broccoli at 400°F for 35 minutes.

  4. Cook quinoa according to package instructions

  5. Slice avocado and season with everything but the bagel seasoning

  6. Prepare tomatoes and zucchini, possibly using them raw or lightly cooked

  7. Assemble all prepared ingredients into a bowl
