Meal Prepped Chicken and Buttery Zoodles

Ingredients

  • 1 piece chicken
  • BBQ seasoning
  • zucchini noodles
  • garlic ghee
  • red pepper flakes
  • 0.5 avocado
  • Brussels sprouts
  • tomatoes

Preparation

  1. If meal prepping, preheat oven to 400°F and roast chicken with BBQ seasoning for 30 minutes.

  2. If meal prepping, roast Brussels sprouts at 400°F for 40 minutes.

  3. For the meal, sauté zucchini noodles in garlic ghee with red pepper flakes for 4-5 minutes.

  4. Heat the prepped chicken and Brussels sprouts in a cast iron skillet to keep them crispy.

  5. Add fresh avocado and tomatoes to assemble the dish.

  6. Tip: Heating in a skillet instead of a microwave maintains freshness and crispiness.
