Hearty Meal Prepped Chicken Veggie Bowl
Ingredients
- 1 piece chicken
- mushrooms
- onions
- tomatoes
- zucchini
- 1/2 avocado
- sweet potatoes
- asparagus
- BBQ rub seasoning
- avocado oil
- everyday seasoning
Preparation
Preheat oven to 400°F.
Bake chicken with BBQ rub seasoning for 30 minutes.
Roast sweet potato fries at 400°F for 20 minutes on each side.
Roast asparagus with everyday seasoning at 400°F for 15 minutes.
Cook zucchini with avocado oil until tender.
In a cast iron skillet, heat up the baked chicken.
Sauté mushrooms and onions until soft.
Assemble all ingredients in a bowl, adding tomatoes and avocado fresh.
