Hearty Meal Prepped Chicken Veggie Bowl

Ingredients

  • 1 piece chicken
  • mushrooms
  • onions
  • tomatoes
  • zucchini
  • 1/2 avocado
  • sweet potatoes
  • asparagus
  • BBQ rub seasoning
  • avocado oil
  • everyday seasoning

Preparation

  1. Preheat oven to 400°F.

  2. Bake chicken with BBQ rub seasoning for 30 minutes.

  3. Roast sweet potato fries at 400°F for 20 minutes on each side.

  4. Roast asparagus with everyday seasoning at 400°F for 15 minutes.

  5. Cook zucchini with avocado oil until tender.

  6. In a cast iron skillet, heat up the baked chicken.

  7. Sauté mushrooms and onions until soft.

  8. Assemble all ingredients in a bowl, adding tomatoes and avocado fresh.
