Simple No-Bake Cereal Cookies
Ingredients
- 2 cups favorite low FODMAP cereal or muesli
- 1/2 cup peanut butter
- 1/4 cup maple syrup
Chocolate coating
- 1/2 cup vegan chocolate chips
- Coconut oil
Preparation
Blend all ingredients except the chocolate coating until a thick batter forms.
Scoop the batter into balls, flatten them, and freeze.
Melt the chocolate chips and coconut oil together.
Dip the frozen cookies into the melted chocolate mixture.
