Turkish Salty Stick Cookies

Ingredients

  • 250 grams soft butter or margarine
  • 3 whole eggs
  • 1/2 teaspoon instant yeast
  • 1 heaping tablespoon sugar
  • 1 teaspoon salt
  • Flour: 4 cups minus two fingers (approximately 880 ml total, using 220 ml cup measure)

Topping

  • 1 egg yolk
  • A tip of teaspoon molasses
  • Nigella seeds

Preparation

  1. Mix egg, sugar, and yeast in a bowl using a whisk

  2. Add salt and continue mixing

  3. Add butter and knead by hand

  4. Gradually add flour and knead until the dough is soft, non-sticky, and easy to shape

  5. Without waiting, break off pieces the size of large walnuts and roll them into long sticks on a surface, aiming for medium thickness

  6. Wrap each stick around a plastic straw or skewer tightly but without pressing, then slide off onto a parchment-lined tray

  7. Bake in a preheated oven at 170°C on the second rack from the bottom for 35 minutes with fan off

  8. Move to the middle rack and bake for an additional 5 minutes until golden brown

  9. Remove from oven, cool, and it is ready to serve

Tips

  1. Store without putting in a container to keep fresh

  2. This cookie has a great flavor, is addictive like a snack, and does not stale easily
