Easy Brazilian Chicken Croquettes

Ingredients

  • 2 cups water (can be from cooking chicken)
  • 1 cup milk
  • 1 tablespoon margarine
  • 1 chicken bouillon cube
  • 3 cups all-purpose flour
  • 1 medium potato, cooked with skin, peeled and mashed (optional)
  • salt to taste

Preparation

  1. Place water, milk, margarine, chicken bouillon cube, potato (if using), and salt in a saucepan and mix until boiling

  2. Reduce heat and add the flour all at once

  3. Stir until a smooth and homogeneous dough forms that pulls away from the bottom of the pan

  4. Transfer to a surface, stir the dough a bit and knead until smooth

  5. Fill as desired

  6. Dip in a mixture of half water and half milk, then coat in breadcrumbs and fry
