Easy Homemade Brazilian Chicken Croquettes
Ingredients
Dough
- 2 cups water (can be from boiled chicken)
- 1 cup milk
- 1 tablespoon margarine
- 1 cube chicken broth
- 3 cups all-purpose flour
- salt to taste
Optional addition
- 1 medium potato, cooked with skin, peeled and mashed
Coating
- water and milk mixture (equal parts)
- breadcrumbs
Preparation
Dough
Place water, milk, margarine, chicken broth, salt, and optional potato in a saucepan and mix until boiling
Reduce heat and add flour all at once
Stir until the dough is smooth and homogeneous and pulls away from the bottom of the pan
Transfer to a surface, stir the dough a bit and knead until smooth
Shaping and frying
Fill the dough with your preferred filling
Coat in a mixture of equal parts water and milk, then in breadcrumbs
Fry until golden
