Fried Mutton Chops Appetizer

Ingredients

  • 8-12 mutton chops
  • 1 medium onion
  • 4 cloves of garlic
  • 1 thumb-sized piece of ginger
  • a handful of fresh coriander
  • 1-2 green chillies (adjust to taste)
  • 1 tbsp lemon juice
  • 1 tsp chilli powder
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tsp mixed herbs
  • 1/2 tsp black pepper
  • a pinch of ground cinnamon
  • 1 tsp Chipotle paste (replace with chilli sauce if unavailable)
  • 1 tsp English Mustard
  • 2-3 tbsp olive oil
  • 1 level tsp salt
  • 1/2-1 tsp papaya paste

Garnish

  • fresh coriander
  • lemon wedges

Preparation

  1. Blend all ingredients except papaya paste to create a smooth marinade, adding a splash of water if necessary, then marinate the chops and refrigerate for at least 2 hours or overnight.

  2. Add papaya paste 30-60 minutes before cooking and allow the chops to marinate for that duration.

  3. Heat oil in a cast iron pan until almost smoking, fry the chops for 6-8 minutes on each side until brown and caramelized, then garnish with fresh coriander and lemon wedges and serve immediately.

Tips

  1. Marinate the chops a day in advance for enhanced flavor.

  2. Use papaya paste sparingly, as prolonged marination can disintegrate the meat.
