Fried Mutton Chops Appetizer
Ingredients
- 8-12 mutton chops
- 1 medium onion
- 4 cloves of garlic
- 1 thumb-sized piece of ginger
- a handful of fresh coriander
- 1-2 green chillies (adjust to taste)
- 1 tbsp lemon juice
- 1 tsp chilli powder
- 1 tsp paprika
- 1 tsp thyme
- 1 tsp mixed herbs
- 1/2 tsp black pepper
- a pinch of ground cinnamon
- 1 tsp Chipotle paste (replace with chilli sauce if unavailable)
- 1 tsp English Mustard
- 2-3 tbsp olive oil
- 1 level tsp salt
- 1/2-1 tsp papaya paste
Garnish
- fresh coriander
- lemon wedges
Preparation
Blend all ingredients except papaya paste to create a smooth marinade, adding a splash of water if necessary, then marinate the chops and refrigerate for at least 2 hours or overnight.
Add papaya paste 30-60 minutes before cooking and allow the chops to marinate for that duration.
Heat oil in a cast iron pan until almost smoking, fry the chops for 6-8 minutes on each side until brown and caramelized, then garnish with fresh coriander and lemon wedges and serve immediately.
Tips
Marinate the chops a day in advance for enhanced flavor.
Use papaya paste sparingly, as prolonged marination can disintegrate the meat.
