Raisin and Walnut Fingers
Ingredients
- 2 cups flour
- 1/4 cup corn oil
- 1/8 teaspoon salt
- 1/4 cup water
Filling
- 1 cup finely chopped raisins
- 1/4 cup ground walnuts
- 1 tablespoon rose water
- 1/4 teaspoon cinnamon
For frying

For serving
- syrup
- ground pistachio
Preparation
In the mixer bowl, place the flour, oil, salt, and water. Attach the dough hook and operate on medium speed to obtain cohesive smooth dough. Operate on low speed for a minute.
Shape the dough into a disk. Cover with plastic wrap and let it rest for about an hour.
For the filling: In a deep plate, place the raisins, walnuts, rose water, and cinnamon. Mix with fingertips to combine well. Take a teaspoon amount of the filling and shape it into a small finger. Shape the remaining filling into small equal fingers.
On a flour-dusted surface, roll out the dough with a rolling pin to about 5mm thickness. Using a sharp knife, cut the dough into 3-inch squares.
Take a finger of filling and place it on one end of a dough square. Wrap the dough around the filling and seal the edges well. Use a small fork to make several holes in the fingers.
In a deep frying pan, add oil to a height of about 2 inches. Place the pan over medium heat.
Fry the raisin and walnut fingers until golden brown. Using a slotted spoon, transfer to paper towels to drain excess oil.
Dip the fingers in syrup and gently toss to coat.
Using a slotted spoon, transfer to a serving dish. Sprinkle with ground pistachio and serve.
