Chocolate Chip Blueberry Muffins
Ingredients
- 2 cups 1-1 gluten-free baking flour (recommend Bob's Red Mill)
- 1/2 cup butter, softened, or coconut oil, softened
- 1 cup sugar
- 4 tbsp brown sugar or coconut sugar
- 2 eggs
- 1/2 cup almond milk
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp sea salt for sprinkling on top
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 2/3 cup blueberries
- 2/3 cup chocolate chips
Crumble
- 6 tbsp coconut oil or butter
- 1/2 cup rolled oats
- 1/2 cup almonds
- 4 tbsp sugar (brown or white)
Preparation
Preheat oven to 375°F and line a muffin tin.
Combine wet ingredients, including sugar.
Mix in dry ingredients.
Add in blueberries.
Pour batter into tins.
Pulse all crumble ingredients in a food processor or blender.
Divide the crumble atop the muffins.
Bake for 20 minutes or until golden brown and a toothpick comes out clean.
