Chocolate Chip Blueberry Muffins

Ingredients

  • 2 cups 1-1 gluten-free baking flour (recommend Bob's Red Mill)
  • 1/2 cup butter, softened, or coconut oil, softened
  • 1 cup sugar
  • 4 tbsp brown sugar or coconut sugar
  • 2 eggs
  • 1/2 cup almond milk
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp sea salt for sprinkling on top
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2/3 cup blueberries
  • 2/3 cup chocolate chips

Crumble

  • 6 tbsp coconut oil or butter
  • 1/2 cup rolled oats
  • 1/2 cup almonds
  • 4 tbsp sugar (brown or white)

Preparation

  1. Preheat oven to 375°F and line a muffin tin.

  2. Combine wet ingredients, including sugar.

  3. Mix in dry ingredients.

  4. Add in blueberries.

  5. Pour batter into tins.

  6. Pulse all crumble ingredients in a food processor or blender.

  7. Divide the crumble atop the muffins.

  8. Bake for 20 minutes or until golden brown and a toothpick comes out clean.
