Coconut Chia Seed Quinoa with Fruit
Ingredients
- 1/2 cup uncooked tri colour quinoa
- 1 cup soy protein milk + 60 ml milk for the chia seeds
- 1 tbsp chia seeds
- 1 banana
- 1 satsuma
- 1 tbsp maple syrup (optional)
Preparation
Rinse and drain the quinoa. Place it in a small saucepan and add the milk. Bring to a high simmer, cover and reduce heat to a low simmer for 15 minutes.
Combine the chia seeds with 60 ml of the milk in a bowl and leave to soak until all the milk has been absorbed by the chia.
After 15 minutes, remove the pan from the heat and add the soaked chia seeds and stir well.
Let it sit for 5 more minutes or until the milk is absorbed and the quinoa is cooked.
Dice the banana and share between two bowls. Then scoop the quinoa into the bowls and top with the satsuma. Serve with maple syrup if you like.
Cooking tips
Don't walk away from the milk while it is cooking; if it starts bubbling, turn the heat off, give it one stir mid-cook if needed, and resume.
