Energy Laddoo with Oats and Dates

Ingredients

  • 6 dates
  • 1.5 cups dry roasted instant oats
  • 1/2 cup flaxseeds (dry roasted and ground coarsely)
  • 2 tablespoons peanut butter
  • 2 tablespoons chopped cashews and almonds
  • 2 tablespoons virgin coconut oil
  • Cashews for topping

Preparation

  1. Soak 6 dates in 2 spoons of warm water for 1-2 hours and remove seeds.

  2. Puree the dates in a mixer and transfer to a bowl.

  3. In a mixing bowl, add 1.5 cups dry roasted instant oats.

  4. Add 1/2 cup dry roasted and coarsely ground flaxseeds.

  5. Add 2 tablespoons peanut butter.

  6. Add 2 tablespoons chopped cashews and almonds.

  7. Add the date puree.

  8. Add 2 tablespoons virgin coconut oil and mix all ingredients well with hands.

  9. Shape the mixture into balls to form laddus.

  10. Place a cashew on top of each laddu.

Tips

  1. Chia seeds can also be used instead of flaxseeds.

  2. Add other dry fruits as desired.

  4. These laddus can be stored in the refrigerator for up to 7 days.
