Fluffy Healthy Pumpkin Chocolate Chip Pancakes

Ingredients

  • 60g pumpkin puree
  • 1 tsp apple cider vinegar
  • ~100ml plant milk
  • 50g oat flour
  • 30g buckwheat flour
  • 1 tbsp starch
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • pinch of salt
  • a handful of dark chocolate chips (sugar-free)
  • 1/2 tsp pumpkin spice
  • sweetener of choice

Preparation

  1. Mix all ingredients together.

  2. If needed, add more plant milk.

  3. Bake the pancakes on each side in a well-coated pan with a tiny bit of oil.

  4. Serve with your favorite toppings.
