Fluffy Healthy Pumpkin Chocolate Chip Pancakes
Ingredients
- 60g pumpkin puree
- 1 tsp apple cider vinegar
- ~100ml plant milk
- 50g oat flour
- 30g buckwheat flour
- 1 tbsp starch
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- pinch of salt
- a handful of dark chocolate chips (sugar-free)
- 1/2 tsp pumpkin spice
- sweetener of choice
Preparation
Mix all ingredients together.
If needed, add more plant milk.
Bake the pancakes on each side in a well-coated pan with a tiny bit of oil.
Serve with your favorite toppings.
