Grandma's Ghraybeh Shortbread Cookies

Ingredients

  • 1 cup ghee at room temperature
  • 1 cup powdered sugar
  • 3 cups flour
  • 1 teaspoon liquid vanilla
  • 1/2 teaspoon ground mastic

Preparation

  1. Place the wire rack in the middle of the oven and preheat the oven to 180°C.

  2. Prepare shallow baking sheets and line them with parchment paper.

  3. In the mixer bowl, place the ghee and sugar. Attach the paddle attachment and run the mixer on medium speed until the ghee becomes light white and crumbly in texture.

  4. Add the flour, vanilla, and mastic. Run the mixer on medium speed for 6 minutes until a soft and cohesive dough forms.

  5. Take a piece of dough the size of a walnut and shape it into fingers or desired shapes. Place the ghraybeh on the prepared sheets with 1 cm space between them.

  6. Bake the ghraybeh for 10 minutes until the bottom is golden.
