Maple Plantain Oatmeal Breakfast Bowl

Ingredients

  • 1/4 cup rolled oats
  • 1/4 cup quick oats
  • 1 tbsp ground flaxseed
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1 tsp maple syrup
  • 1 1/4 cup unsweetened vanilla almond milk
  • 1 ripe plantain

Preparation

  1. Preheat oven to 400F.

  2. Slice half of the plantain into coins and place on a baking sheet lined with parchment paper or silicone mat, sprinkle with a little cinnamon and salt, then bake for 10 minutes.

  3. In a saucepan, combine the rolled oats, quick oats, ground flaxseed, cinnamon, and salt.

  4. Add the other half of the plantain (cut into coins), unsweetened vanilla almond milk, and maple syrup to the saucepan.

  5. Place the saucepan over heat and bring to a low simmer.

  6. Stir the mixture with a spatula or wooden spoon and mash up the plantains.

  7. Allow the mixture to thicken and cook for about 5 minutes.

  8. If the mixture is too thick, add a little more milk.

  9. Remove from heat and adjust seasonings to taste, adding more sweetener or cinnamon if preferred.

  10. Top with the roasted plantains, blueberries, blackberries, peanut butter, and drizzle with more maple syrup if desired for extra sweetness.
