Maple Plantain Oatmeal
Ingredients
- 1/4 cup rolled oats
- 1/4 cup quick oats
- 1 tbsp ground flaxseed
- 1/2 tsp cinnamon and a little extra for the baked plantains
- pinch of salt
- 1 tsp maple syrup
- 1 1/4 cup unsweetened vanilla almond milk
- 1 ripe plantain
Preparation
Set oven to 400F
Take 1/2 of sliced plantain and place in baking sheet lined with parchment paper/silicone mat and sprinkle with a little cinnamon and salt
Place in oven to bake for 10 minutes
In a sauce pan combine dry ingredients and add in plantain, milk and maple syrup
Place over heat and bring to a low simmer
Stir mixture with a spatula/wooden spoon and mash up the plantains
Allow mixture to thicken and cook for about 5 minutes
If mixture is too thick, feel free to add a little more milk
Remove from stove top, and adjust seasonings to taste (add more sweetener or cinnamon based on preference)
Top with roasted plantains and other toppings
