Maple Plantain Oatmeal

Ingredients

  • 1/4 cup rolled oats
  • 1/4 cup quick oats
  • 1 tbsp ground flaxseed
  • 1/2 tsp cinnamon and a little extra for the baked plantains
  • pinch of salt
  • 1 tsp maple syrup
  • 1 1/4 cup unsweetened vanilla almond milk
  • 1 ripe plantain (Cut half plantain into coins to add to oats and the other half for baking)

Preparation

  1. Set oven to 400F

  2. Take 1/2 of sliced plantain and place in baking sheet lined with parchment paper/silicone mat and sprinkle with a little cinnamon and salt

  3. Place in oven to bake for 10 minutes

  4. In a sauce pan combine dry ingredients and add in plantain, milk and maple syrup

  5. Place over heat and bring to a low simmer

  6. Stir mixture with a spatula/wooden spoon and mash up the plantains

  7. Allow mixture to thicken and cook for about 5 minutes

  8. If mixture is too thick, feel free to add a little more milk

  9. Remove from stove top, and adjust seasonings to taste (add more sweetener or cinnamon based on preference)

  10. Top with roasted plantains and other toppings
