Pb&j Ice Cream Cups

Ingredients

  • for the base:
  • 50g dates (soaked in hot water)
  • 25g oat flour
  • 15g coconut flour
  • 5g cacao powder
  • 10g almond milk
  • for the peanut butter cream:
  • 75g cashews (soaked overnight)
  • 100g coconut cream
  • 30g peanut butter
  • 1tbs maple syrup ▪️1tsp coconut oil
  • for the berry top:
  • 75g raspberries ▪️10g chia seeds
  • 1tsp coconut oil

Preparation

  1. Blend all the base ingredients together until a thick dough is formed

  2. Scoop out and put into moulds (i used silicone muffin tray)

  3. Press firmly and evenly and put in the fridge to set

  4. Blend the peanut butter cream ingredients together and place on top of bases

  5. Put in the freezer to set

  6. Blend the ingredients for the top layer together and pour over set cream

  7. Leave in the freezer to set

  8. Store in the freezer and allow to thaw for 15/20 before eating
