Peach Banana Loaf with Oat Flour
Ingredients
- 1 3/4 cup of flour
- 1/2 cup of oat flour (blended whole oats)
- 2 tsp of baking powder
- 1 tsp baking soda
- 1/2 cup of brown sugar
- a pinch of salt
- 1/2 tsp of cinnamon
- 3 medium very ripe bananas
- 1 cup of plant-based milk with 1 heaping tablespoon of fresh lemon juice (leave to curdle)
- 1/2 cup of coconut oil, melted
- 2 tbsp of vegan butter
- 1 large peach, diced
Icing
- store-bought cream cheese (e.g., Tofutti brand)
- 1/2 cup of icing sugar
Preparation
Preheat oven to 350F.
Mix all your wet ingredients and mix well.
Mix together your dry ingredients and mix well.
Fold your wet ingredients into your dry, mix thoroughly.
Fold in your diced peaches.
Line a loaf pan and grease the sides.
Cook for 75 minutes.
Icing
Mix store-bought cream cheese with 1/2 cup of icing sugar.
Tips
Using parchment paper prevents the sides from getting brown or burnt while cooking.
Cooking for 75 minutes prevents the loaf from collapsing; previously, 60 minutes caused collapse.
