Turkish Walnut Roll Dessert

Ingredients

Dough

  • 2 tablespoons butter or margarine (100g)
  • 1/2 cup vegetable oil
  • 1/2 cup semolina
  • 2 tablespoons vinegar
  • 1 egg
  • 2 tablespoons yogurt
  • 1 packet vanilla
  • 1 packet baking powder
  • approximately 3 cups flour

Filling

  • sufficient crushed walnuts

Syrup

  • 3 cups sugar
  • 3.5 cups water
  • one thin slice lemon

Preparation

  1. Knead the dough ingredients by hand in a deep bowl.

  2. Place the dough on parchment paper, press it down slightly, cover with another sheet of parchment paper, and roll it out thinly with a rolling pin.

  3. Trim the edges with a knife to make them straight.

  4. Spread the finely crushed walnut filling over the dough and press it down with your hands.

  5. Cut the dough into thin strips as described.

  6. Make a cut through the middle of the dough.

  7. Roll up the strips into rolls and arrange them on a baking sheet lined with parchment paper.

  8. Bake in a preheated oven at 180°C for about 30 minutes.

  9. Pour the cold syrup over the baked rolls and let them rest for about 4 hours.

  10. Serve sprinkled with pine nuts.

Syrup

  1. Combine the syrup ingredients in a pot and stir until it boils.

  2. After boiling, simmer on low heat for 18 minutes.

  3. Turn off the heat and let it cool completely; it should be very cold, and preparing it a day in advance is recommended for better results.

Tips

  1. Ensure the syrup is very cold to achieve the best texture.

  2. Preparing the syrup a day ahead enhances the flavor.
