Vegan and Paleo Dark Chocolate Carrot Cake Muffins

Ingredients

  • 1 cup steamed then puréed carrots
  • 2 flax eggs
  • 2 tbsp coconut sugar OR maple syrup or 3-5 drops monk fruit
  • 1 tbsp coconut oil
  • 1 tsp Vanilla extract
  • 1 tbsp chia seeds
  • 1 tbsp shredded coconut
  • 1/4 cup almond or hazelnut flour
  • 1/4 cup coconut flour
  • 2 tbsp hemp powder
  • 1/4 cup extra dark chocolate (or sub with your favorite protein powder)
  • Dash of Sea salt
  • 1 tsp Baking soda
  • Dash of Cinnamon
  • Dash of Nutmeg
  • Dash of Cardamom (optional)

Preparation

  1. Mix wet ingredients in a large bowl.

  2. Add dry ingredients and stir together until batter forms.

  3. Pour into muffin cups and bake at 350 for 20 minutes.
