Vegan and Paleo Dark Chocolate Carrot Cake Muffins
Ingredients
- 1 cup steamed then puréed carrots
- 2 flax eggs
- 2 tbsp coconut sugar OR maple syrup or 3-5 drops monk fruit
- 1 tbsp coconut oil
- 1 tsp Vanilla extract
- 1 tbsp chia seeds
- 1 tbsp shredded coconut
- 1/4 cup almond or hazelnut flour
- 1/4 cup coconut flour
- 2 tbsp hemp powder
- 1/4 cup extra dark chocolate (or sub with your favorite protein powder)
- Dash of Sea salt
- 1 tsp Baking soda
- Dash of Cinnamon
- Dash of Nutmeg
- Dash of Cardamom (optional)
Preparation
Mix wet ingredients in a large bowl.
Add dry ingredients and stir together until batter forms.
Pour into muffin cups and bake at 350 for 20 minutes.
