Vegan Banana Cake with Coconut Glaze
Ingredients
- 1 banana
- 1/4 cup water
- 1 tablespoon coconut oil
- 1/2 tablespoon apple cider vinegar
- vanilla essence
- 1/2 cup spelt flour
- 1/4 cup oat flour
- 1/4 cup ground flaxseed
- 1 tablespoon chia seeds
- 1 teaspoon baking powder
- 1/4 cup brown sugar
Coconut glaze
- 1 can full-fat coconut cream
Preparation
Chill the can of coconut cream in the refrigerator for 1 hour.
In a blender, mix all ingredients except chia seeds, adding chia seeds last.
Transfer the mixture to a small budín mold and bake for 30 minutes at 185°C.
Let the budín cool after baking.
For the frosting, remove the chilled coconut cream and blend until it forms a paste.
Spread the glaze over the cooled budín and refrigerate for at least 2 hours.
Decorate with fruits or serve as is.
