Vegan Banana Cake with Coconut Glaze

Ingredients

  • 1 banana
  • 1/4 cup water
  • 1 tablespoon coconut oil
  • 1/2 tablespoon apple cider vinegar
  • vanilla essence
  • 1/2 cup spelt flour
  • 1/4 cup oat flour
  • 1/4 cup ground flaxseed
  • 1 tablespoon chia seeds
  • 1 teaspoon baking powder
  • 1/4 cup brown sugar

Coconut glaze

  • 1 can full-fat coconut cream

Preparation

  1. Chill the can of coconut cream in the refrigerator for 1 hour.

  2. In a blender, mix all ingredients except chia seeds, adding chia seeds last.

  3. Transfer the mixture to a small budín mold and bake for 30 minutes at 185°C.

  4. Let the budín cool after baking.

  5. For the frosting, remove the chilled coconut cream and blend until it forms a paste.

  6. Spread the glaze over the cooled budín and refrigerate for at least 2 hours.

  7. Decorate with fruits or serve as is.
