Syrup-Soaked Apple-Filled Cookies
Ingredients
Dough
- 150 g margarine or butter
- 125 ml vegetable oil
- 3 tablespoons yogurt
- 3 tablespoons powdered sugar
- 1 packet vanilla
- 1 packet baking powder
- 4 cups flour
Filling
- 4 medium apples
- 1/2 cup granulated sugar
- 1 cup chopped walnuts
- 1 teaspoon cinnamon
Syrup
- 200 ml water
- 1/2 cup granulated sugar
- 4-5 drops lemon juice
Topping
- 1 cup shredded coconut
Preparation
Peel and grate the apples, then place them in a pan.
Add sugar and cook, stirring, until the apples release and absorb their juices.
Add crushed walnuts and cinnamon, mix well, and remove from heat.
For the syrup, combine water and granulated sugar in a small pot, stir to dissolve, and bring to a boil.
After boiling, add lemon juice and boil for another 10 minutes, then remove from heat.
For the dough, place butter in a mixing bowl.
Add vegetable oil, yogurt, powdered sugar, and baking powder, and mix.
Gradually add flour and knead until the dough comes together.
Shape dough into walnut-sized balls and flatten them slightly.
Place apple filling in the center, seal, and roll into balls again, then arrange on a baking tray.
Bake in a preheated 180°C oven for about 20 minutes without fan.
After baking, dip the hot cookies into lukewarm syrup using a fork and coat with shredded coconut.
Tips
You can serve decorated with pistachios and pomegranate.
