Fried Eggplant with Butter Sauce

Ingredients

  • 2 eggplants
  • 1/4 onion
  • 2 tablespoons oyster sauce
  • 2 tablespoons margarine
  • 3 garlic cloves
  • 3 shallots
  • 5 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • Water as needed
  • Oil as needed

Preparation

  1. Mix the flour, salt, and water until it forms a thick batter. Dip the eggplant in the batter, fry in hot oil until golden brown, then remove and drain.

  2. Heat the margarine until melted, add the chopped garlic and shallots until fragrant and golden brown.

  3. Add the onion, fried eggplant, and oyster sauce. Stir briefly then remove from heat.

  4. Serve the eggplant with butter sauce.

Notes

  1. Purple and green eggplants have similar nutritional content, but purple eggplant contains anthocyanin antioxidants that help fight free radicals and prevent diseases, including cancer.
