Turkish Walnut Baklava

Ingredients

Dough

  • 50 grams butter
  • 1/2 cup vegetable oil
  • 1/2 cup yogurt
  • 1/2 cup milk
  • 1/2 cup water
  • a pinch of salt
  • 1 egg
  • 2 tablespoons vinegar
  • 1 teaspoon baking powder
  • 5 cups flour (Teksin baklava flour brand)

Filling

  • 300 grams walnuts
  • wheat starch

Topping

  • 250 grams butter

Syrup

  • 4 cups sugar
  • 5 cups water
  • lemon juice

Preparation

  1. Mix all dough ingredients together and knead until smooth.

  2. Let the dough rest for at least 30 minutes.

  3. Divide the dough into small portions and roll each into thin sheets.

  4. Prepare the filling by finely chopping the walnuts and mixing with wheat starch.

  5. Layer the dough sheets, brushing each with melted butter and sprinkling with the walnut mixture.

  6. Bake in a preheated oven at 350°F until golden brown.

  7. For the syrup, combine sugar and water in a saucepan and bring to a boil.

  8. Squeeze lemon juice into the syrup and simmer for a few minutes.

  9. Allow the baklava to cool slightly, then pour the hot syrup over it.

Tips

  1. Ensure the syrup is hot and the baklava is lukewarm or cold when combining for best results.
