Cinnamon Pear Cauliflower Zoats
Ingredients
- 1/2 cup cauliflower rice
- 1/2 zucchini grated
- 3/4 cup @malkorganics almond milk
- 1 scoop plant based chocolate protein
- 1 tbsp flax meal
- 1 tbsp chia seeds
- 1 tbsp MCT oil or coconut oil
- cinnamon
- cardamom
- Optional: reishi powder & collagen
Preparation
Add oil to small sauce pan over medium heat.
Add cauliflower and zucchini, and toss in oil for 2-3 minutes.
Add remaining ingredients and stir frequently.
Reduce to simmer and allow to thicken 2-3 minutes.
Top with 1/4 pear sautéed in coconut oil and cinnamon, bee pollen, pomegranate seeds, goji berries, and cashew butter.
