Cinnamon Pear Cauliflower Zoats

Ingredients

  • 1/2 cup cauliflower rice
  • 1/2 zucchini grated
  • 3/4 cup @malkorganics almond milk
  • 1 scoop plant based chocolate protein
  • 1 tbsp flax meal
  • 1 tbsp chia seeds
  • 1 tbsp MCT oil or coconut oil
  • cinnamon
  • cardamom
  • Optional: reishi powder & collagen

Preparation

  1. Add oil to small sauce pan over medium heat.

  2. Add cauliflower and zucchini, and toss in oil for 2-3 minutes.

  3. Add remaining ingredients and stir frequently.

  4. Reduce to simmer and allow to thicken 2-3 minutes.

  5. Top with 1/4 pear sautéed in coconut oil and cinnamon, bee pollen, pomegranate seeds, goji berries, and cashew butter.
