Zucchini Oats Breakfast with Peanut Butter Topping

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp ground flaxseed
  • 1/3 grated zucchini
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 1 mashed banana
  • 1 cup unsweetened soy milk

Preparation

  1. Add all ingredients to a saucepan and stir together.

  2. Bring to a simmer and cook until thickened, about 3-5 minutes.

  3. It will continue to thicken as it cools, so feel free to adjust to your liking.

  4. Serve with fruit and peanut butter.
