Fluffy Chocolate Chip Banana Pancakes

Ingredients

  • 160 g spelt flour
  • 40 g chocolate chips
  • 1 Tbsp arrowroot powder
  • 1 tsp baking soda
  • 1 pinch of salt
  • 150 ml coconut milk
  • 80 ml water
  • 1 Tbsp coconut blossom syrup
  • 1 tsp apple vinegar
  • 1 banana

Preparation

  1. Combine all dry ingredients except chocolate chips.

  2. Mix the liquid ingredients in a separate bowl.

  3. Add the liquid ingredients to the dry ingredients and mix until well combined.

  4. Mix in chocolate chips.

  5. Slice banana and heat a little oil in a large pan on medium-high heat.

  6. Add pancake batter to the pan and place three banana slices on each pancake.

  7. Flip pancakes when bubbles start to form on top.

  8. Cook the other side until golden brown
