Blueberry Cashew Paleo Oatmeal

Ingredients

  • 1/2 cup almond milk
  • 1/2 mashed banana
  • 2 egg whites
  • 1 tsp coconut sugar
  • 1 scoop vanilla collagen protein
  • 1/2 tbsp cinnamon
  • 2 tbsp ground flaxseed
  • 1/4 cup frozen blueberries
  • 1 tbsp cashew butter
  • a few cashews
  • more frozen blueberries

Preparation

  1. Heat 1/2 cup of almond milk over medium heat for about 3 minutes until warm.

  2. Add 1/2 mashed banana, 2 egg whites, 1 tsp coconut sugar, 1 scoop of vanilla collagen protein, 1/2 tbsp cinnamon, 2 tbsp ground flaxseed, and 1/4 cup frozen blueberries.

  3. Stir everything together and let cook for an additional 5 minutes until it starts to thicken.

  4. Top with 1 tbsp of cashew butter, a few cashews, and more frozen blueberries.
