Blueberry Cashew Paleo Oatmeal
Ingredients
- 1/2 cup almond milk
- 1/2 mashed banana
- 2 egg whites
- 1 tsp coconut sugar
- 1 scoop vanilla collagen protein
- 1/2 tbsp cinnamon
- 2 tbsp ground flaxseed
- 1/4 cup frozen blueberries
- 1 tbsp cashew butter
- a few cashews
- more frozen blueberries
Preparation
Heat 1/2 cup of almond milk over medium heat for about 3 minutes until warm.
Add 1/2 mashed banana, 2 egg whites, 1 tsp coconut sugar, 1 scoop of vanilla collagen protein, 1/2 tbsp cinnamon, 2 tbsp ground flaxseed, and 1/4 cup frozen blueberries.
Stir everything together and let cook for an additional 5 minutes until it starts to thicken.
Top with 1 tbsp of cashew butter, a few cashews, and more frozen blueberries.
