Vegan Hot Chocolate Porridge

Ingredients

  • 1 1/2 cups oats
  • 1 frozen banana
  • 1 tsp vanilla extract
  • 1 tbsp agave
  • 1/3 cup peanut butter
  • 1/8 cup homemade date syrup
  • 1/8 tsp salt
  • 1/8 cup cacao nibs
  • 150ml water
  • 250ml unsweetened almond milk

Toppings

  • vegan hot chocolate
  • banana
  • dry roasted peanuts
  • peanut butter
  • desiccated coconut
  • grated vegan chocolate
  • cacao nibs

Preparation

  1. Place all the ingredients in a bowl and stir until combined.

  2. Cooking time will vary depending on whether you use a microwave or stovetop.

  3. For microwave cooking, ensure your bowl is microwave safe. Cook for 2-minute intervals, stirring in between, until most of the liquid is absorbed and desired consistency is reached. Note that cooking time was 8 minutes in an 800W microwave.

  4. For stovetop cooking, place the mixture in a saucepan, bring to a boil, and simmer on medium heat while continuously stirring until most of the liquid is absorbed and desired consistency is reached. This recipe serves 3 people depending on portion size.

Serving suggestions

  1. Top the porridge with vegan hot chocolate, banana, dry roasted peanuts, peanut butter, desiccated coconut, grated vegan chocolate, and cacao nibs.
