Healthy Vegan Rice Pudding

Ingredients

  • 100g brown rice
  • 500ml soya milk
  • 30g white chocolate protein powder
  • 1/2 teaspoon cinnamon
  • Pinch of sea salt

Topping

  • 100g soya yoghurt
  • 1 heaped tablespoon cacao powder

Preparation

  1. Cook the rice according to package instructions but using soya milk instead of water.

  2. Once cooked, add the salt, cinnamon, and protein powder, and mix well.

  3. If the mixture is too thick, add a dash of water.

  4. Pour the pudding into a bowl.

  5. Mix 100g of soya yoghurt with a heaped tablespoon of cacao powder for the topping.

  6. Pour the topping over the pudding.

Notes

  1. Optionally, drizzle with butterscotch caramel sauce and add a square of hazelnut chocolate for extra flavor.

  2. This recipe provides a high-protein vegan breakfast with approximately 57g protein per serving.
