Semolina Pudding with Berries and Maple Syrup
Ingredients
- 3/4 cup non-dairy mylk (I used @ulu_hye almond)
- 1/4 cup semolina
- 1 Tbsp vegan butter
- 1/2 cup berries
- 1-2 Tbsp maple syrup
- Pinch of cinnamon
Preparation
Bring mylk and butter to a boil.
Turn the heat down and stir in the semolina.
Keep stirring until the semolina gets creamy.
In a separate bowl heat the berries and maple syrup until the berries just start to break down.
Take them off the heat, pour the semolina in a bowl and serve with warm berries.
Notes
This dish has a nostalgic 'tastes like home' quality and is a simple porridge alternative.
Semolina is high in protein and fiber, which slow digestion and increase feelings of fullness between meals.
It is also rich in B vitamins like thiamine and folate, which help convert food into energy.
