Semolina Pudding with Berries and Maple Syrup

Ingredients

  • 3/4 cup non-dairy mylk (I used @ulu_hye almond)
  • 1/4 cup semolina
  • 1 Tbsp vegan butter
  • 1/2 cup berries
  • 1-2 Tbsp maple syrup
  • Pinch of cinnamon

Preparation

  1. Bring mylk and butter to a boil.

  2. Turn the heat down and stir in the semolina.

  3. Keep stirring until the semolina gets creamy.

  4. In a separate bowl heat the berries and maple syrup until the berries just start to break down.

  5. Take them off the heat, pour the semolina in a bowl and serve with warm berries.

Notes

  1. This dish has a nostalgic 'tastes like home' quality and is a simple porridge alternative.

  2. Semolina is high in protein and fiber, which slow digestion and increase feelings of fullness between meals.

  3. It is also rich in B vitamins like thiamine and folate, which help convert food into energy.
