Caramelized Fruit Peanut Butter Toast

Ingredients

  • artisan multi grain bread
  • pure peanut butter

Blueberry compote

  • 1/4 cup frozen blueberries
  • 1/2 cup water

Caramelized apples

  • 1 tablespoon vegan butter
  • half a honey crisp apple, chopped
  • 1/4 teaspoon cinnamon
  • 2 teaspoons maple syrup

Caramelized bananas

  • banana coins
  • additional vegan butter

Preparation

  1. In a saucepan, combine frozen blueberries and water over medium-high heat and cook until the mixture thickens into a sauce, then remove from heat.

  2. In a pan, melt vegan butter, add chopped honey crisp apple, cinnamon, and maple syrup, stir to coat, and cook until tender.

  3. Push the apples to the side in the pan, add more vegan butter, let it melt, then add banana coins and cook until golden.

  4. Toast the artisan multi grain bread.

  5. Spread pure peanut butter on the toasted bread.

  6. Top with blueberry compote, caramelized apples, and caramelized bananas, then serve.

Tips

  1. Optionally add syrup to the blueberry compote for extra sweetness if desired.
