Bharat Khichdi Unity Meal
Ingredients
- 1/2 cup rice, washed and soaked for 15 minutes
- 1/2 cup yellow moong dal, washed and soaked for 15 minutes
- 250g bottle gourd, diced
- 1 carrot, diced
- 2 green chillies, slit
- 1 1/2 tbsp ghee
- 1/2 tsp turmeric
- 1/2 tsp red chilli powder
- 1 tsp coriander powder
- salt to taste
- 3 cups water
Tempering
- 1 tbsp ghee
- 1 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1 tsp sesame seeds
- curry leaves
- 1 dry red chilli
- optional chopped green chilli
- 1 onion, diced
- 1 tomato, diced
- 1 small capsicum, diced
- 1/2 tsp turmeric
- 1/2 tsp red chilli powder
- 1 tsp coriander powder
- fresh coriander for garnish
Preparation
Pressure cook ghee, veggies, soaked rice-dal, water, and spices for 3–4 whistles.
In a separate pan, make tadka with ghee, seeds, curry leaves, dry chillies.
Add onions, capsicum, tomato and dry spices, then sauté until oil separates.
Mix the cooked khichdi into the tadka and simmer for 2–3 minutes.
Garnish with coriander and serve hot.
Serving suggestions
Serve with curd, pickle, or papad.
