Halloumi Quinoa Salad with Pomegranate
Ingredients
- 2 blocks Halloumi
- 2 cups quinoa, cooked as per pack instructions
- Vegetables of your choice: salad greens, 3 sliced peppers, 1 sliced cucumber, handful cherry tomatoes
- 1/2 cup walnuts
- 1/2 cup pomegranate seeds
Dressing
- 1/4 cup olive oil
- 2 tbsp pomegranate molasses
- salt and pepper
Preparation
Cook the quinoa as per pack instructions. While it’s cooking, prepare the rest of your ingredients. Leave the halloumi till last so it goes from the grill straight to the table.
Slice the vegetables.
Make the salad dressing.
Arrange everything as you want. Don’t forget the walnuts and pomegranate seeds.
Pat dry the halloumi and slice into thick slices. Brush with a little olive oil and cook under a medium hot grill for five minutes on each side.
Serve immediately. Enjoy!
Tips
Serve deconstructed to encourage children to eat more vegetables by letting them choose their portions.
