10-Minute Chickpea Salad Sandwiches

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 3/4 cup vegan mayo
  • 3 tbsp chopped green onion
  • 2 ribs of celery, chopped
  • 1 small apple, chopped
  • 1 tbsp dijon
  • 1 tsp apple cider vinegar
  • Juice of 1/2 a lemon
  • 1 tsp maple syrup
  • 1 tbsp sriracha (optional)
  • 1/4 tsp each salt and pepper
  • 1/2 tsp garlic powder or 1 clove of garlic, minced
  • 1 cup of chopped leafy greens of choice (kale, chard, etc.)

Serving suggestions

  • Bread of choice
  • Lettuce
  • Hummus
  • Avocado

Preparation

  1. Pulse chickpeas in a food processor or high-speed blender until they resemble coarse small chunks, but no whole chickpeas remain.

  2. Add the chickpea mixture to a large bowl and add the rest of the ingredients.

  3. Add more salt and pepper to taste.

  4. Serve on sourdough bread with smashed avocado, hummus, and lettuce.

Notes

  1. This is a vegan alternative to tuna salad sandwiches and is centered on gut health.
