10-Minute Chickpea Salad Sandwiches
Ingredients
- 1 can of chickpeas, drained and rinsed
- 3/4 cup vegan mayo
- 3 tbsp chopped green onion
- 2 ribs of celery, chopped
- 1 small apple, chopped
- 1 tbsp dijon
- 1 tsp apple cider vinegar
- Juice of 1/2 a lemon
- 1 tsp maple syrup
- 1 tbsp sriracha (optional)
- 1/4 tsp each salt and pepper
- 1/2 tsp garlic powder or 1 clove of garlic, minced
- 1 cup of chopped leafy greens of choice (kale, chard, etc.)
Serving suggestions
- Bread of choice
- Lettuce
- Hummus
- Avocado
Preparation
Pulse chickpeas in a food processor or high-speed blender until they resemble coarse small chunks, but no whole chickpeas remain.
Add the chickpea mixture to a large bowl and add the rest of the ingredients.
Add more salt and pepper to taste.
Serve on sourdough bread with smashed avocado, hummus, and lettuce.
Notes
This is a vegan alternative to tuna salad sandwiches and is centered on gut health.
