Dairy-Free Tzatziki with Tofu and Fresh Herbs
Ingredients
- 1 block medium or firm tofu
- 1 small lemon, juiced
- 1 tbsp olive oil
- 2 garlic cloves
- 1/4 cup fresh dill, loosely chopped
- 2 tbsp fresh parsley, loosely chopped
- 1/2 tbsp fresh mint, loosely chopped
- A pinch of salt & pepper
- 1 cup cucumber, shredded
Preparation
Add tofu, lemon juice, olive oil and garlic to a food processor and blend until smooth.
Add fresh herbs, salt and pepper and blend until well incorporated.
Shred cucumber, add to food processor and pulse to combine.

Use fresh herbs to give this the beautiful flavor.
