Peanut Noodles with Hoisin Tofu
Ingredients
- 1/4 cup natural smooth peanut butter
- 3 tablespoons light soy sauce
- 1 tablespoon pure maple syrup
- 1 tablespoon rice vinegar
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/2 cup boiling water
- firm tofu
- hoisin sauce
- noodles or vegetables
Preparation
Whisk the sauce ingredients together until combined.
Cook skewered firm tofu on a panini press until done, then top with hoisin.
Toss the sauce with cooked noodles or vegetables and heat through before serving.
Tips
Avoid cooking sauced items on the panini press as it is difficult to clean.
If rice vinegar is unavailable, use half the amount of apple cider vinegar.
Add sesame oil to the sauce for a stronger peanut flavor.
Top with cilantro for extra taste, unless you find it soapy due to genetics.
