Crispy Fried Fish Fillet
Ingredients
- 8 pieces fish fillet
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup flour
Batter mixture
- 1 cup flour
- 1/2 cup starch
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon vinegar
- 1 cup water approximately
Preparation
Using a knife, cut the fillets into slices about 1 cm thick.
Sprinkle some salt and pepper on the fish.
In a wide plate, place the flour.
Take a piece of fish and put it in the flour to cover it with a thin layer. Place the fillets in a wide plate so they are not on top of each other.
In a wide skillet, heat the oil over medium heat.
The mixture: In a deep plate, place the flour, starch, baking powder, baking soda, salt, paprika, cumin. Using a hand whisk, mix to combine the ingredients.
Add water gradually, mix gently to get a liquid batter; when you lift the whisk, the batter should be continuous and not break.
Now add the vinegar and mix a little; you will notice bubbles forming, and these bubbles are important for crispiness.
Take a piece of fish fillet that has been covered with flour.
Put the fish piece in the flour again to cover with a light layer.
Put it in the batter mixture then immediately put it in the oil.
Fry until golden brown from the bottom; while frying, using a spoon, pour hot oil over the surface of the fish for delicious crispiness.
Flip the fillet to the other side and wait a little until it becomes golden brown.
Transfer the fillet to absorbent paper, wait a few seconds to drain excess oil, then serve.
